Ingredients:
1 big tin of sliced Peaches (drained)
50 ml margarine
250 ml sugar
250 ml cream
Dough ingredients:
2 eggs
125 ml sugar
50 ml margarine
250 ml cake flour (measured unsifted)
10 ml baking powder
2 ml salt
2 ml ginger powder
75 - 80 ml milk
Sauce ingredients:
50 ml sweet wine or sherry or peach juice
25 ml margarine
Method:
Place the peach slices in a greased pie dish +/- 24 cm diameter. Melt the butter and sugar over slow heat until golden brown. Add the cream and stir until sugar dissolve. Throw sauce over the peach slices.
Dough: Beat the eggs and sugar until fluffy, add the margarine and mix well. Sift the flour, baking powder, salt and ginger powder together. Mix the flour and the egg mixture together. Pour this mixture over the peach slices and bake in the oven at 180ÂșC for 50 minutes.
Sauce: Heat the wine and the margarine and when the pudding is baked, throw the sauce over the pudding. Let it rest for a while and then turn the pudding over bottom side up. Cut into slices and serve with custard. Enjoy!
