Ginger Pudding 4-6 people

Ingredients:
115g butter or margarine
125ml fine apricot jam
180g wheat flour
10ml soda bicarbonate
pinch salt
      Syrup:
      250g sugar
      625ml water
      5ml ginger powder

Method:
Melt butter over mild heat. Mix with the rest of the ingredients. Mix syrup ingredients in a pot and heat till boiling point. Add the mixture of the dough to the syrup mixture, put the lid on and cook over mild heat for 10 min without lifting the lid. Serve with cream, ice-cream or custard.
